1. Chocolate Chip Peanut Butter Cookies

Who doesn’t love a good peanut butter cookie with some added chocolate chips? This recipe makes soft and chewy protein cookies without the use of flour or gluten. Here’s what you need to make them.

  • 1/2 cup of peanut butter
  • 1/4 cup of light brown sugar
  • 1/4 tsp kosher salt
  • 1 large egg and 1 large egg white
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 1/2 cup of vanilla whey protein
  • 2 TBS coconut flour
  • 3 TBS mini chocolate chips

Preheat over to 350F with a baking rack in the center. Place parchment paper on a baking sheet.

Combine peanut butter, sugar, salt, eggs, and vanilla extract in a bowl. Blend, then sprinkle baking soda on the top.

Add coconut flour and protein powder. Continue to blend together until the dough seems less dry. Add the chips.

To achieve a dryer dough, use more protein powder. For a more moist dough, sprinkle almond milk on top.

Use a spoon to scoop dough onto the baking sheet, creating about 12-14 cookies. Flatten tops with your fingers and bake for about 5-6 minutes until edges are golden brown. Cool for 3 minutes on a cooling rack and enjoy!

2. Strawberry Banana Smoothie

Looking for easy protein shake recipes? This smoothie only takes a few ingredients to make and taste amazing! Here’s what you need.

  • 1/2 a banana
  • 1 cup frozen strawberries
  • 1 cup of ice
  • 2 scoops of frozen vanilla yogurt
  • 1 1/2 cup of apple juice
  • 1 1/2 scoops of vanilla whey protein powder

Pour the apple juice into a blender, then add the protein powder, next add the ice cubes, and lastly add all other ingredients. Switch the blender on using the “puree” setting. Blend until all ice and strawberries are blended well.

3. Mini Pizza Muffins

Mini pizza muffins are a fun snack and very filling. Here’s what you’ll need.

  • 2 cups almond flour
  • 3 TBS unflavored whey protein
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 TBS pizza seasoning
  • 1/2 tsp garlic powder
  • 1 1/4 cup shredded mozzarella cheese
  • 5 TBS melted butter
  • 3/4 cup of almond milk
  • 2 large eggs
  • 1 cup of diced pepperoni

Preheat oven to 325F. Grease a mini muffin pan. Whisk the flour, protein powder, pizza seasoning, baking powder, salt, and garlic powder together.

Add cheese and pepperoni. Whisk eggs, almond milk, and butter into the mix until well combined. Fill muffin pan cups about 3/4 of the way.

Bake 17-20 minutes and allow to cool for about 10. Any leftover batter can be used to make a second batch!
